I spent a lot of time researching and compiling a list of how far from the ceiling they should be and you can see here and how to build one DIY.

Why are Bunk Beds 80″ Tall or Less

Most homes built in the US and Canada for the past many decades have a ceiling height of 96.5″ not including flooring. With a bunk bed height of 80″ plus half an inch for flooring that leaves 16″ inches of headroom for the top bunk sleeper.

This is the absolute minimum to allow a small child to use the upper loft comfortably, barely. With the average bunk height being 65.25″ that leaves 30.75″ for headroom for much more comfort in the bedroom penthouse.
